Quick and Easy Dinner with Colorfull Plates

So, in our house, sometimes dinnertime comes up without us even realizing the time. We are normally playing the whole afternoon, so when I look up and see the dinner hour is almost here, it's easy to panic, but don't fret. Here is my go-to recipe that always results with happy eaters, even with my picky one. Also, I put the spaghetti right on the image so the littles get an opportunity to dig a bit before they see the image on the plates. Works like a charm every time. 

Spaghetti Cacio e Pepe

  • 5 minutes prep and 18 minutes cook

  • Bring a large pot of lightly salted water to a boil. Cook spaghetti in the boiling water, stirring occasionally until tender yet firm to the bite, about 10 minutes. Scoop out some of the cooking water and reserve. Drain spaghetti.

  • Heat oil in a large skillet over medium heat. Add garlic and pepper; cook and stir until fragrant, 1 to 2 minutes. Add spaghetti and Pecorino Romano cheese. Ladle in 1/2 cup of reserved cooking water; stir until cheese is melted, about 1 minute. Add more cooking water until sauce coats spaghetti, about 1 minute more.
